corn flake caramel crunch oreo stuffed ganache brownies "You're the cream filling in and Oreo, baby-all smooshed up in there!" ... "Y'all know how much I love a Halloween Oreo-I swear to God they taste better! I don't care what y'all say they taste better than all the Oreos ever made-the orange ones, I don't know what it is."

Ingredients

  • 1/8 t Salt
  • 1/2 C AP Flour
  • 1 T Vanilla Extract
  • 4 Eggs + 1 Yolk
  • 2 C Granulated Sugar
  • 3/4 C Unsalted Butter
  • 1 Heaping C Dark Chocolate Chip
  • 1/4 t Salt
  • 2 T + 1 t Unsalted Butter, melted
  • 1/4 C Granulated Sugar
  • 1/4 C Milk Powder (Malted Milk)
  • 3 3/4 C Corn Flakes
  • 16 Orange Oreos
  • 2 C Granulated Sugar
  • 1/2 C Heavy Cream
  • 4 T Unsalted Butter, cubed
  • 3/4 t Vanilla Extract

Method

  • Step 1

    Start your corn flakes. Preheat oven to 275

  • Step 2

    Melt butter in the microwave.

  • Step 3

    Combine corn flakes, milk powder, sugar and salt in a large bowl, drizzle in melted butter and mix gently to combine.

  • Step 4

    Spread out on a parchment lined baking sheet.

  • Step 5

    Bake for 10 mins, tossing after 5 mins. Set aside.

  • Step 6

    Start your brownies. Preheat oven to 300.

  • Step 7

    In a medium pan over med-low heat melt chocolate and butter. Stir until smooth, then add sugar. Mix until smooth. Remove from heat and allow to cool.

  • Step 8

    Crack the eggs into a small bowl and whisk.

  • Step 9

    Add eggs, vanilla, and salt to melted chocolate and mix to combine.

  • Step 10

    Add flour and fold until just combined. Do not over mix. Batter will be runny.

  • Step 11

    Line a 9x9 pan with parchment paper.

  • Step 12

    Slowly pour about 1/3 of batter into the bottom of the pan. Then add the 16 Oreos. Carefully, pour the remaining batter on top of the Oreos. They may float up a bit. Thats okay, just make sure theyre covered.

  • Step 13

    Bake for 40-45 mins. The toothpick test will not work. Trust the process.

  • Step 14

    Allow the pan to cool for 1 hour on the counter.

  • Step 15

    Once the brownies are out of the oven begin the caramel.

  • Step 16

    First measure and prep all ingredients. Transfer your cornflakes into a large bowl.

  • Step 17

    In a medium pan over low heat melt the sugar. Stir with a wooden spoon. The sugar will melt into a beautiful amber liquid.

  • Step 18

    Once melted remove from the heat and very slowly add your cream. Do this is several small additions. It will bubble, and hiss thats okay. Once one addition has combined add the next.

  • Step 19

    Do the same with the butter cubes.

  • Step 20

    Once the cream and butter is combined and the mixture is smooth return to medium heat and cook, stirring constantly until a candy thermometer reaches the thread stage about 245.

  • Step 21

    Remove from heat and add vanilla.

  • Step 22

    Slowly pour caramel over corn flakes and toss with a rubber spatula.

  • Step 23

    Carefully, pour caramel crunch on top of cooled brownies.

  • Step 24

    Chill in the fridge for at least one hour before slicing.
