Shit! Is that a Fajita?
"You are NOT the complementary basket of chips and salsa!"
Ingredients
- Lime
- 1/2 Cup Shredded Cheddar Cheese
- Sour Cream
- 8 Corn Tortillas
- 4 Boneless, Skinless Chicken Titties
- 2 t Ground Cumin
- 1/2 t Paprika
- Salt
- Olive Oil Spray
- 1 t Garlic Powder
- 1 Red Bell Pepper
- 1 Onion
- 1 Orange Bell Pepper
- 1 T Olive Oil + 1 t
- 4 Mushrooms
- 1/2 Cup Pineapple Tidbits, drained and blotted
Method

Step 1
Preheat air fryer to 380

Step 2
Pound Chicken until they are thin and even

Step 3
Drizzle chicken with olive oil

Step 4
Season chicken with salt and spices

Step 5
Add chicken to the air fryer and cook for 10-12 mins flipping half way

Step 6
Cut bell peppers and onion into 1/4 inch strips, transfer to a large bowl and add 1 T olive oil and a pinch of salt

Slice mushrooms, set aside in small bowl with 1 t olive oil and a pinch of salt

Transfer chicken to a plate and let rest while cooking the veggies

Set air fryer to 350

Step 10
Add bell peppers and onions and cook for 12 mins. Shake the basket a few times to redistribute

Add the mushrooms when there are 3 minutes left on your veggie timer

Add pineapple during the lat minute and increase temperature to 400

Step 13
Cover tortillas with a damp paper towel and warm in the microwave for 30~45 seconds. Or lightly char on the gas stove top

Slice chicken in thin strips

Assemble fajitas by adding chicken, cheese and veggies to warmed tortillas. Top with a squeeze of lime and dollop of sour cream
